Ingredients:
  • 700g potatoes peeled and diced
  • 2 cups broccoli florets fresh or frozen
  • 1 cup sour cream
  • 1 can cream of chicken soup or cream of mushroom soup
  • 1 1/2 cups shredded cheddar cheese
  • 1/2 cup milk
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • Salt and black pepper to taste
  • 1/2 cup Optional crushed crackers for topping
Instructions

    Preheat your oven to 180°C / 350°F,
    Boil the diced potatoes for 8 to 10 minutes until just tender then drain,
    Steam or microwave the broccoli until slightly tender,
    In a large bowl mix sour cream cream soup milk garlic powder onion powder salt black pepper and 1 cup cheddar cheese,
    Fold in the potatoes and broccoli,
    Spread the mixture into a greased casserole dish,
    Top with the remaining cheddar cheese and crushed crackers if using,
    Bake for 35 to 45 minutes until bubbling and golden,
    Rest for 5 minutes before serving,
