Ingredients:
  • 500g lean beef mince 5%
  • 4 bell peppers halved
  • 1 small onion diced
  • 2 garlic cloves minced
  • 1 can chopped tomatoes
  • 1 tbsp mustard
  • 100g light cheddar grated
  • Salt and pepper
Instructions

    Preheat the oven to 190C.

    Brown the lean beef mince in a skillet over medium heat.

    Add onion and garlic and cook for 3 minutes.

    Stir in chopped tomatoes mustard salt and pepper.

    Simmer for 5 minutes until thickened.

    Fill the pepper halves with the beef mixture.

    Top with grated cheddar and bake for 20 minutes until tender.
