Description

These Pumpkin Protein Balls combine pumpkin puree, rolled oats, peanut butter, vanilla protein powder, chia seeds, and pumpkin spice for an easy no-bake snack. Make a batch ahead and keep them chilled for a convenient fall-inspired protein snack.

  1. Add the pumpkin puree, peanut butter, maple syrup, and vanilla extract to a large mixing bowl. Stir until smooth and well combined.
  2. Add the rolled oats, protein powder, chia seeds, pumpkin pie spice, and salt.
  3. Stir thoroughly until a thick, evenly combined mixture forms.
  4. Fold in the mini chocolate chips, if using.
  5. Refrigerate the mixture for about 20–30 minutes. This gives the oats and chia seeds time to absorb some moisture and makes the mixture easier to handle.
  6. Scoop approximately 1 tablespoon of the mixture at a time and roll it between your palms to form a ball.
  7. Repeat until you have approximately 16 protein balls.
  8. Place the finished balls in an airtight container and refrigerate until firm.

Note

The exact consistency can vary depending on the protein powder and peanut butter you use. If the mixture is too sticky after chilling, add rolled oats 1 tablespoon at a time. If it's too dry or crumbly, add a teaspoon of pumpkin puree or peanut butter.

Use 100% pumpkin puree, not pumpkin pie filling, which contains added sugar and spices.

Store the protein balls in an airtight container in the refrigerator.
