Tuscan chicken with spinach and tomatoes in a lighter creamy sauce.

Ingredients:
  • 2 chicken breasts sliced
  • 1 tsp olive oil
  • 3 garlic cloves minced
  • 150g cherry tomatoes
  • 2 big handfuls spinach
  • 150g light cream cheese
  • 30g parmesan
  • 150ml chicken stock
  • 1 tsp Italian seasoning
  • Salt and pepper
Instructions

    Heat olive oil in a large skillet over medium heat.

    Cook the chicken slices for 5 to 6 minutes until golden.

    Add garlic and cherry tomatoes and cook for 2 minutes.

    Stir in the cream cheese chicken stock and parmesan.

    Add Italian seasoning and season with salt and pepper.
