One Pot Taco Pasta Casserole
Description
A cheesy taco pasta casserole made in one pot with ground beef, pasta, tomatoes, beans, and taco seasoning.

Preheat your oven to 180°C / 350°F if using an oven-safe skillet,
Heat oil in a large oven-safe skillet or pot,
Add the ground beef and onion then cook until browned,
Stir in the pasta chopped tomatoes black beans taco seasoning beef broth and sweetcorn,
Bring to a simmer then cover and cook for 12 to 15 minutes until the pasta is tender,
Stir occasionally so the pasta does not stick,
Sprinkle cheddar cheese over the top,
Transfer to the oven for 8 to 10 minutes or cover on the hob until the cheese melts,
Rest for 5 minutes before serving,
Top with sour cream or spring onions if desired,
Note
Use kidney beans instead of black beans if needed. Add extra broth if the pasta needs more liquid. This can be made mild or spicy depending on the taco seasoning.
