A cheap and easy pantry lasagna made with pasta, canned tomatoes, beans, and a simple cheesy topping.

Ingredients:
  • 300g pasta shapes
  • 1 tbsp olive oil
  • 1 onion diced
  • 2 garlic cloves minced
  • 2 cans chopped tomatoes
  • 1 can white beans drained
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1 tsp sugar optional
  • 150g grated cheese
  • 100g cottage cheese or cream cheese
  • Salt and black pepper to taste
Instructions

    Preheat the oven to 190°C.

    Cook the pasta in salted water until just tender then drain.

    Heat olive oil in a large pan over medium heat.

    Add the onion and garlic and cook for 3 minutes until softened.

    Stir in the chopped tomatoes white beans oregano basil sugar salt and pepper.

    Simmer the sauce for 10 minutes until slightly thickened.

    Mix the cooked pasta into the tomato sauce.

    Spoon half of the pasta mixture into a baking dish.

    Add small spoonfuls of cottage cheese or cream cheese over the top.

    Add the remaining pasta mixture and sprinkle with grated cheese.

    Bake for 20 to 25 minutes until bubbling and golden.

Note

Use any short pasta you have in the cupboard. Lentils or chickpeas can replace the white beans if needed.
