Ingredients:

  1. Preheat the oven to 190°C.
  2. Cook the pasta in salted water until just tender then drain.
  3. Heat olive oil in a large pan over medium heat.
  4. Add the onion and garlic and cook for 3 minutes until softened.
  5. Stir in the chopped tomatoes white beans oregano basil sugar salt and pepper.
  6. Simmer the sauce for 10 minutes until slightly thickened.
  7. Mix the cooked pasta into the tomato sauce.
  8. Spoon half of the pasta mixture into a baking dish.
  9. Add small spoonfuls of cottage cheese or cream cheese over the top.
  10. Add the remaining pasta mixture and sprinkle with grated cheese.
  11. Bake for 20 to 25 minutes until bubbling and golden.
  12. Let it rest for 5 minutes before serving..

Note

Use any short pasta you have in the cupboard. Lentils or chickpeas can replace the white beans if needed.
