  1. Cook the pasta in salted water until tender.
  2. Reserve half a cup of pasta water then drain the pasta.
  3. Heat the sardine oil in a large skillet over medium heat.
  4. Add the garlic and chilli flakes and cook for 1 minute.
  5. Add the sardines and gently break them into the oil.
  6. Stir in the lemon zest lemon juice and a splash of pasta water.
  7. Add the cooked pasta and toss until coated.
  8. Season with salt and black pepper to taste.
  9. Sprinkle with parsley and breadcrumbs if using.
  10. Serve immediately with extra lemon if desired..

Note

Use sardines in olive oil for the best flavour. If you prefer a milder taste, use tuna instead.
